Honey-Glazed Salmon

Well I have benefitted quite a bit from your recipes, so now I really need to return the favor. Here is a salmon recipe we found recently and love! It is sooooo easy, really. We try to have salmon once a week (ok, the boys have fish sticks usually) and this so far is the recipe we are sticking with. Enjoy!


Ingredients:
2 tbsp honey
1 tbsp fresh orange juice
1 tbsp fresh lemon juice
1 tbsp hoisin sauce
2 tsp dijon mustrd
1/4 tsp table salt
1/4 tsp black pepper
1 1/2 pounds salmon filets - cut into 4, 6 oz pieces


Instructions:
  • Preheat broiler
  • Combine first 7 ingredients and stire well with a wisk.
  • Place fillets on a broiler pan coated with cooking spray. Brush with honey misture.
  • Cook 12 minutes or until fish flakes easily when tested with a fork, basting frequently with honey mixture.
  • Yields 4 servings.

A few notes - hoisin sauce is found in the asian section of your grocery store, this tastes just as good without the orange juice as a few times I had to make it without that, I put foil on my pan and cook them on the foil, and mine are usually done in 8 minutes - so check often because the honey mixture with burn.
